Sunday ~ Turkey & Vegetable Soup

A few weeks back we roasted one of my $5 turkeys from Hannaford’s crazy turkey sale the weeks before Thanksgiving. I always save the tidbits and broth to make a big pot of soup! I will toss in any veggies I have on hand, followed by the broth, some water and let it simmer away. You could also add brown rice or gluten free pasta! I am planning on making some gluten-free biscuits using Gluten-Free Bisquick.

Monday ~ Mexican Chicken Bake

I am testing a gluten free version of this old family favorite this week.

Tuesday ~ Veggie Stuffed Omelets & frozen berries

Wednesday ~ Slow Cooker Roast with Carrots, Onions and Potatoes

We had some lamb on Sunday.  I like lamb, but only in small doses, and usually more Mediterranean in nature.  All the same, this wasn't bad at all.

We always pick up a few fresh roasts for the freezer when they go on sale.

Thursday ~ Zucchini or Bell Peppers Stuffed with Quinoa Stuffing

You could easily substitute peppers for the zucchini!

    Thanks for posting these recipes ! I am on a 30day to fit plan and have cut out dairy, gluten, soy, and processed sugars. I use my Arbonne vegan, gluten free protein shakes for two meals but I’ve been looking for healthy meals for my third meal of the day. Please keep the recipes coming!
