What’s for Dinner–Week Two

North Country is expecting some frigid temperatures this week so I’ve planned some hearty meals. But I need those meals to be easy to prepare since I’ll be worn out from bundling the kids in 18 layers just to walk to the car. Recipes that require little prep and can be left alone for hours in a slow cooker are perfect for cold busy days. I’ve planned a crock pot beef stew for Sunday and the same stew simply reheated on the stovetop for Wednesday but fancied up with easy dumplings cooked in the same pot.

What are your favorite recipes for warding off the cold?

Sunday (Slow Cooker)

Stew

Beef Stew. The most basic of basic recipes, you can add your favorite winter root vegetables like parsnips, turnips, butternut squash or celery root.

 

Monday (30 Minutes, Vegetarian)

 Stuffed Portabellas with Creamy Parmesan Polenta. This vegetarian meal is surprisingly filling and hearty and comes together very quickly. The stuffed portabellas recipe calls for dry white wine but you can also substitute chicken, vegetable or beef broth. If you already have dry breadcrumbs or panko on hand use those instead of making fresh breadcrumbs. Instant polenta can be found in the baking aisle or next to the oatmeal.

 

Tuesday (30 Minutes)

CitrusChicken

Citrus Chicken with Peppers, served over steamed white rice with a side salad. Citrus fruits are in season now and at low prices. To save prep time use a frozen bell pepper and onion stir fry mix. Use this opportunity to make extra rice. It freezes really well and is great to have on hand for last minute meals.

 

Wednesday (Leftovers)

Beef Stew with Dumplings. Leftover stew just became interesting with the addition of homemade dumplings. Reheat leftovers and just add the dumplings once it starts to boil. I love this dumpling recipe because it uses ingredients I already have in the pantry.

 

Thursday (30 Minutes)

DCF 1.0

Fettuccini with Sausage and Kale. This is a great way to use up the rest of the Parmesan from Monday. Kale is in season and grown at many local farms.

 

Friday (Take Out)

Take Out Pizza!

 

Saturday (Leftovers)

If there are any leftovers use them up before grocery shopping on Sunday or have breakfast for dinner for a quick meal.

    Yum! I love dumplings in stews. Delicious! I also use my slow cooker quite a bit. Today I’m making a lazy cabbage roll recipe from Aimee at Simple Bites. Cabbage rolls are a favorite from my husband’s childhood, but this recipe is updated and easier! Roasting the cabbage really gives it a great flavor and an addition of saurkraut with the beef layer is delicious (and healthy…fermented vegetables are great for aiding in digestion and absorption of nutrients).     Betsy that’s a great idea! I’m going to incorporate this into a weekly menu. I’ve never tried this in a crockpot.
